From El Vergel Estates in Tolima, Colombia, this is a uniquely processed coffee. The process is anaerobic natural, which uses specially controlled fermentation to promote specific flavor characteristics in the final bean. Coffee cherries are placed in airtight stainless steel tanks and allowed to ferment without the presence of oxygen for about 60 hours or until the desired pH levels are achieved. They are then sun dried on raised beds for over 24 days, and finally mechanically finished in small silos before milling.
El Vergel Estates is one of Tolima’s largest coffee producers, managed by Shady and Elias Bayter and their mom Marta.
