Finca Villa Betulia has been around for 15 years originally offering Colombian Classics, like Castillo and other Colombian varieties. Around 12 years ago, however, they decided to introduce new varieties and process methods. Their efforts were met with resounding success. Villa Betulia now boasts over 20 varieties one of which is Papayo Natural Anaerobic. Process description : Papayo commences its flavor development with a 96 hour soak in plastic tanks, followed by a 15 day sun drying session on raised beds. Subsequently it undergoes a 20 day resting period in grain pro bags before progressing to the milling stage. This streamlined process ensures optimal flavor infusion.
