Ronald and Noelia produce yellow and red Catuai and a small amount of Ethiosar in Las Nubes, a community straddling the boundary between Jinotega and Matagalpa. Low-lying clouds keep Ronald and Noelia’s coffee cool, slowing the maturation process and allowing the beans to absorb more sugars. Ronald and Noelia work extremely hard to support their farm and 12 children, with Ronald even sleeping in their coffee during the harvest to discourage thieves, and Noelia starting her day at 2:30 AM to cook for workers. Donald and Noelia use the benefits of higher prices to improve their coffee, production and processing equipment, home, and the standard of living of their family.
