Grown in the high-altitude foothills of the Colombian Andes, our Colombia Black Condor comes from a region with a complex history shaped by conflict and resilience. Emmanuel, a lifelong coffee grower who entered the industry in 2006, saw an opportunity to support producers in his community by creating access to local coffee processing. With the help of his family, he opened a processing center in 2016 and now works with producers across more than 15 villages. In 2019, Forest Coffee and Emmanuel partnered on the Black Condor Project, offering local farmers workshops in fermentation, cupping, and drying techniques while supporting producers whose communities have been affected by guerrilla warfare. The Black Condor’s processing highlights the natural character of the coffee, allowing the beans to ferment with their mucilage for 24 hours before being washed and dried on patios for 15-25 days. The result is a cup with sweet, syrupy qualities and notes of tropical fruit. We’re especially excited to share this release after welcoming Pablo from Forest Coffee to our roastery in September 2025, where we learned more about Forest’s work with producers and their ongoing experimentation with processing. With Colombian coffee production facing significant challenges from changing weather patterns, this release is also an opportunity to celebrate the remarkable work of the farmers and producers behind this coffee, and the communities working to build a stronger future for Colombian coffee.
